A little planning makes for a good breakfast

If you barely crawled out of bed this morning, only to rush the kids off to school, take a quick shower (but not wash your hair!) and stumble into work to make that nine o’clock meeting, forgetting all about breakfast, you are not alone. More and more Americans are skipping breakfast these days, not necessarily because they’ve made a deliberate choice, but because our schedules are so overbooked that there just isn’t time.

Well shame on us! We’ve all heard that breakfast is the most important meal of the day, and some of us may even believe it. Now it is time for us to do something about it. With a little prior planning, we can all eat a good breakfast.

An article in the Toronto Sun offers some suggestions for time savers. From preparing breakfast the night before to packing something to eat on the run, they not only have smart, time-saving suggestions, but also some healthy choices. Smoothies, yogurt with fruit and other portable ideas like trail mix, whole grain crackers with cheese and fruit and even a hard boiled egg.I have been wanting to try a make-the-night-before crock pot breakfast cobbler recipe (with a few healthier substitutions) and this article has inspired me to do so. My substitutions, you ask? Instead of all that honey, I’ll replace only half with organic blackstrap molasses. And virgin coconut oil will replace the butter. I won’t serve it with milk, as suggested, but instead I’ll put a dollop of plain, whole milk organic yogurt on top. I can hardly wait for my hot and delicious breakfast to be waiting for me tomorrow morning.
